How I made chicken work

One of the reasons I decided to go into catering is that I love cooking for people.

The thing though, about cooking for people, is that they all love different things and have differing tastes when it comes to what they like to eat.

Take chicken for example…

Personally, when I think chicken [breasts] two dishes come to mind; butter chicken and sweet/sour chicken strips.

I recently decided to make a dish that kind of resembles the two, but would also be enjoyed by my husband, who is not into either of those.

Thanks to the sun-dried tomatoes, amasi and mayonnaise I added halfway through the dish, It was a hit.

I actually regretted not having made more.

I served the dish with Basmati rice and fresh salad for my husband. I had mine on a ciabatta roll. We all went to bed happy.

For me cooking is about giving people everyday food that taste better than they expected. Taste that will stay with them for sometime after they have eaten.

I had ordered butter chicken at a number of restaurants serving Indian cuisine, but because it is not to the taste of my family I knew I had to find a compromise. This dish represents that for me.

I am more than happy to make this for you and your family. Call me up. Anytime.

Hello…

My name is Duenna and I love to cook.

Dee2

I am journalist by profession and a born again child of God. A mom to an amazing 2-year-old boy and a wife of a wonderful husband.

Welcome to my blog and thank you for taking the time to read. In this space I will share my love for food and planning things, weddings mostly.

I was introduced to cooking in my teens (16, I think – Gonna have to check with mom). My father is a pastor. During church conferences my mother made me help the ladies in the kitchen to prepare food for the masses.

As a PK (Pastor’s Kid) I was also expected to be on stage during services, I am killer backing vocalist… LOL I know am blowing my own vuvuzela, but yes. I learnt to juggle the two and was always present in both roles.

Fast forward to when I married my husband. My mother said I should be careful not to bore him with the same food everyday. She warned me not to cook stew the same way everyday. Hell, mommy does not even make pap the same way everyday. So I knew I had to up my game. The Pressure, right?

No really. When hubby and I moved into our apartment three days after our wedding, I stood in my kitchen and was overcome by excitement. Excitement of what was to become my platform to create warm, hearty and good meals. Excitement of the memories I would create through my meals.

I have never looked back. In the process I have fallen in love with cooking for people that I finally decided to make money out of it. If not, why not, right?

In comes Duenna’s Kitchen…

I started this project not only to tell the world how much I love food, but also to try and make people’s lives easy.

We all love a home cooked hearty meal on a Sunday afternoon, but not everyone likes to make it. That’s where I fit in. I work with families, to developing menus based on what they like to eat. I then cook and deliver these to their homes. Nice huh? I know. 🙂

I also offer catering services for all types of events.

Still not sold? Contact me to book a seat in one of my menu tastings – Details of which will follow soon.

Looking forward to sharing, learning and hopefully entertaining you.
